When we had a holiday in Denmark in 1980, my dad (who was not Danish but had obviously done his homework) introduced us to his own version of the Danish open sandwich known as smorrebrod (the o’s had slashes through them giving a variable pronunciation of the letter.)
We were self catering, so every morning he would go down to the local bakery to buy Danish pastries for breakfast, and he also bought a very dark dense loaf of bread, thin-sliced or cream cheese, cooked meat and fish to make these delicacies ready for lunch or a picnic if we went out. It certainly made lunch exciting as we created our own smorrebrods.
They stand out as my favourite, but I also enjoyed the culinary delights of France when I went on an exchange at school, and, of course, there are Belgian waffles.
